Soba
Soba is a type of thin Japanese noodle made from buckwheat flour, which is what (soba) means in Japanese. It is similar in thickness as spaghetti and has a brown to grey color depending on how much buckwheat is used to make it. It can be served cold with a soy sauce dipping sauce or in a hot broth. It is frequently eaten as an appetizer before the main course and is accompanied by fish and or vegetables.
